Hello world. I ran 3.1 miles today. In just over 28 minutes. If you know me and the utter hatred I have for that really hard sport we all call running, you would be as excited as I am :) I’m running the Be The Match 5k here in Minneapolis on May 19 in honor of my amazing mama who punched leukemia in the face over 16 years ago thanks to a bone marrow transplant! And no one wants to be the girl puking at the finish line, knowing that the majority of the runners are really just there for practice and training for bigger, more tortuous races like half marathons and such. Yes, I’d much rather be the red-faced, wheezing girl on the treadmill at work, “competing” with the marathon runner next to me who I’m pretty sure works in my division and looks far too pleasant to be on her 9th mile already. Oh well … better than everyone riding the couch cushions! My goal is to run it in under 28 minutes. We shall see!

I’ve done a pretty good job lately on not eating out excessively and making my own lunches for work every day. I like how much healthier I feel when I’m eating fresh produce and unprocessed meals. And my wallet has to be enjoying the money I’m saving by not buying lunch at work and making meals go a little further by packing them for lunch the next day!
On the menu for this week is:
- Corn and Potato Chowder - YUM. Can’t wait to have this for lunch today. I had it cooking on low in the crockpot overnight and the smell I woke up to this morning was unbelievable! Hopefully the soup will get me through a couple lunches and maybe a dinner or two this week. I know Alex is excited to enjoy it for a few meals, too!
- Crockpot Chicken Fajitas- Have I mentioned that I love, love, love my crockpot? Thanks, mom! No recipe here, just going to throw in some chopped onions, green and red bell peppers, black beans, salsa, frozen chicken breast, etc.
- Buffalo Chicken Mac & Cheese - Cooking this for Friday night dinner with Alex and can’t wait! I’ve never made homemade mac before, so it should be pretty tasty!
- Eat Street Social - Okay, definitely eating out here. But Alex is taking me to Mama Mia for my birthday and this restaurant comes highly recommended! Can’t wait to explore their menu!
- LOTS OF FRUITS AND VEGGIES :)
